I like to make weird random soups. Mostly because I don’t plan but partly because I like trying new things. I made a vegan vegetable broth based soup and added ginger root (one of my favs). As I was grating the ginger a thought popped in my head … Jalapenos! I added them. Great idea. They go very well together!
I made this again today, because it’s super easy and really savory. One of my favorite recipes.
English Muffin Hummus Pizza
-Toast an english muffin.
- Spread with hummus
- Top with roasted garlic, olives, daiya, dried basil, and nutritional yeast
Bake at 375 for about 7 minutes, until the Daiya is all melty.
